“You are what you eat!” we tell our kids, but what exactly does that mean?  As a child I imagined that eating green veggies might cause me to sprout “greens” for hair or that too many carrots might turn me orange.  Later I learned that our bodies needed protein to build with, carbohydrates for energy, and fat to make hormones and carry certain fat-soluble vitamins.  And as an adult I have come to know that there are many things that can go into the food I eat that will affect the quality of the nutrients I get out of it.  I am not just what I eat.  I am also what my food eats.

Antibiotic and Vaccine Free

Close to 80 percent of antibiotics sold in the United States are used in routine care of livestock. Cows that aren’t grass-fed are typically given hormones to increase their weight and their meat yield. Animals are confined to smaller spaces, greatly increasing the chance of spreading  disease. The use of antibiotics in meat, particularly factory-farmed meats, contributes to antibiotic resistance in the same bacteria that can infect humans.  That doesn’t sound very appetizing.

100% Lifetime Grass-fed

100% grass-fed and grass-finished beef is much leaner than its conventionally-raised counterpart.  But fat content isn’t the whole story.  The ideal Omega 6 to Omega 3 ratio is 4-to-1 or less.  Grass fed beef weighs in at 3-to-1 while conventional beef is closer to 20-to-1.  It isn’t just how much fat you put in your body; the kinds of fats matter. A lot.

Conjugated linoleic acid is a fatty acid that has been shown to reduce risk of heart disease and cancer, discourage weight gain, and build muscle.  Grass-fed beef is one of the top sources of CLA.  It’s also a great source of fat-soluble vitamins that are powerful antioxidants, like A and E.

Feeding cattle grain makes their intestinal tracts much more acidic, promoting the growth of bacteria like E. coli, which can make people seriously ill. Grain feeding, even for a short while at the end of a cow’s life, makes dramatic changes to the health of the gut, the liver, and changes the Omega-6 to Omega-3 ratio, turning an excellent source of proteins, vitamins, minerals, and healthy fats into a health hazard rather than building blocks for a better body.

Eden Pure Beef is grown in the pristine pastures of Falling Creek Farms.  The cattle are raised with no vaccines, no wormers, no antibiotics, and no grain in their diet – ever.  They are all born on the farm and spend their lives browsing a lush variety of native grasses, shrubs, and herbs.  Nothing goes into the cattle except that which God and nature provides.  

You can pick up Eden Pure Beef at Collective Harvest in Athens, Ga and at Nuts N Berries in Atlanta.  Falling Creek Farms also has delivery meetups twice a month along a route between Athens and Atlanta, and is available for Athens area delivery meetups every Monday. Zucchini Lasagna with Eden Pure Beef

This dish meets both the "Keto-friendly" and "Kid-friendly" standard. Leftovers are great for lunch ... if there are any. I use a 9" x 15" casserole dish for this recipe. If all my kids aren't home and there are leftovers it makes for a great lunch (hot or cold according to my boys!). If you are feeding a smaller crew, just halve the recipe and use a 9" x 9" dish.

Ingredients

  • (2 or 3 medium) Zucchini
  • (1 - 1.5 pounds) Premium Ground Beef
  • (1) medium onion, finely diced
  • (4 - 6) cloves of garlic, minced
  • (16 oz) ricotta cheese
  • (16 oz) cottage cheese
  • (2 cups) shredded mozzarella cheese
  • (2 Tablespoons) Italian herb blend
  • (1/2 tsp) salt
  • (16 oz) canned, diced tomatoes, drained thoroughly
  • (1/2 cup or to taste) shredded or grated parmesan

Directions

Slice the zucchini into uniform rounds about 1/8" thick. Spread them out and salt and let them sit for at least 15 minutes to draw out excess moisture.

Preheat the oven to 350*F.

Add 2T of avocado or olive oil to hot skillet, then add onions and Eden Pure Beef, breaking up beef and stirring onions over medium heat until meat starts to brown. Add garlic and continue to cook until meat is browned and onions are translucent. Salt to taste.

In a separate bowl, mix the ricotta, cottage cheese, and half the shredded cheese with the herbs and salt.

Blot zucchini to dry, then cover bottom of a large casserole dish with a single layer of slightly overlapping slices. Top with half the cheese mixture, half the diced tomatoes, and half the beef mixture.
Repeat for a second layer, topping the last off with any remaining zucchini slices. Spread the tomato sauce over the top and cover with remaining shredded cheese and a generous sprinkle of Parmesan cheese.

Bake on 350*F for 35 minutes or until cheese on top is lightly browned.

Remove from oven and allow to rest for 5 minutes before serving.
